Whole grain rice and tomatoe salad
Today’s post is a nice option for a quick and easy meal, nutritious and good for taking to work or college.
Ingredients per person:
1/3 to 1/2 cup cooked whole grain rice.
1 medium tomatoe
1/3 cup of creamy ricotta cheese, diced.
2 to 3 tbspn ketchup
fresh basil leaves
Dice tomatoe and ricotta cheese. Toss in with the rie.
Mix oil and ketchup and add salt if desired.
Sprinkle some basil leaves on the top, just cut in half with your hands, not a knife.
